For me Xmas time equates baking time, I guess it does the same for everyone but from the past 3 years that I have been running Sin-A-Mon as a bakery, even more so. The orders are plenty and this is the season when both me and my oven are working overtime. However this time around due to a lot of personal and health issues I didn’t take any orders but that doesn’t mean I am not baking. The child’s winter vacations have started and my kitchen is turned into a restaurant. He orders and I cook/bake. It’s so much fun and considering that I have had a very busy year, I am really thankful for this year ending bonding exercise. So one of the orders that the child gave was bake something with chocolate and strawberry and we churned up a simple double chocolate strawberry loaf. Simple yet delicious I must add. The loaf is not too sweet and super moist. The sudden bite of chocolate pieces in it makes it extra special as far as I think. I baked two medium loaves and all it took was one evening for them to get over. These are essentially with egg but I think if you replace the 3 eggs with 3/4 cup of curd + 2 tsp of vinegar the recipe will work just as well. Also I used roughly chopped dark chocolate but you can easily sub that with chocolate chips, dark or milk depending on your preference. So here is the recipe.
