Rainbow Cake – a piece of joy

Rainbow cakes are happy cakes, just like rainbows… Whats not to love in them, the colors… just look how pretty it looks

Some weeks ago, Artsy Craftsy Mom asked me for a rainbow cake recipe on FB, I suggested her some links as she told me how her daughter wanted to bake and decorate the rainbow cake as a homecoming party gift after the summer vacation break. Because the cake was so special to Little P, Shruti was a little hesitant to bake it all by herself and I initially offered to help her by giving her batter that she can bake at home, the idea went back and forth and we finally decided that I will bake the cake for her, send her the frosting and she will do the decorations with Little P at home

I loved baking this, I have baked rainbow cupcakes before and I had baked rainbow cake which was a cake with seven layers each with different colors, but this is the first time I was baking rainbow cake with all the colors in one cake and I so enjoyed the pouring, part of me was behaving like a child, pouring a spoonful of a different color each time… what joy πŸ™‚

Recipe – Rainbow Cake

What I used

  • 3/4 cup butter (at room temperature)
  • 1 cup sugar
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 3 eggs
  • 3 tbsp milk
  • 1 tsp vanilla
  • 1 tsp each of red, blue, green and yellow

For the frosting

  • 70gm unsalted butter at room temperature
  • 150gm icing sugar sieved
  • 1-2 tbsp of milk

How I made it

  • Preheat your oven to 190 C and prepare your pan (I used a 6-inch round pan for this) by lightly greasing it with butter and keep aside
  • Beat the butter and sugar together till light and fluffy, this will take about 2-3 minutes
  • Now beat in one egg at a time, adding a little flour if your egg shows signs of curdling
  • Add the milk, vanilla essence and rest of the flour and mix till just blended
  • Divide the batter equally in six bowls
  • Add one tsp of red color in bowl number 1
  • Add one tsp of yellow color in bowl number 2
  • Add one tsp of green color in bowl number 3
  • Add one tsp of blue color in bowl number 4
  • Add half a tsp of red color and half a tsp of yellow color in bowl number 5 to make orange color
  • Add half a tsp of blue color and half a tsp of red color in bowl number 6 to make purple color
  • Take six tbsp measures or 6 equal measure spoons at home and starting with purple, keep pouring one spoonful of each color in the center of the baking bowl. Let the batter spread by itself, when u pour spoon after spoon it will start to form the layers
  • When you have finished pouring the batter, give the bowl couple of gentle taps on the kitchen counter to let go of any large air bubbles and bake in the preheated oven for about 3-40 minutes till the tooth pick comes out clean and the top of the cake bounces back when pressed
  • Let it cool completely before frosting.
  • In the meanwhile, beat your butter and sugar till light and fluffy, mix a bit of blue color to give the sky color, add the milk if you feel the frosting is too thick
  • After the cake is completely cool, spread the frosting on top and decorate with sprinkles and gems

Now you tell me whats not there to fall in love with this cake πŸ™‚

    Hi Monika, I tried this recipe over the weekend. I was a little hesitant in using the food colours so ended up with a “pastel” rainbow cake, nevertheless delicious. Thank you for sharing the recipe. Would you use teaspoons of batter to get layers in cupcakes? Please let me know. Thanks once again.
